7 Common Vegan Mistakes That Secretly Deplete Your Iron

I ate spinach almost every day for my first year vegan and still came back low on iron. Nobody had told me that eating iron and absorbing iron are two different things.

That’s the frustrating part. You can do everything the internet told you and still be short.

Low iron in vegans isn’t scaremongering from your aunt. It shows up in the research often enough to take seriously.

The good news is that almost all of it comes down to timing and pairing, not to eating more.

Here are the seven mistakes I made, roughly in the order I made them.

Number two is the one that fixed my bloodwork.

🩸 1. Not Pairing Iron With Vitamin C

This is the single biggest one. Vitamin C can multiply how much plant iron you actually absorb from a meal.

Bell peppers, tomatoes, citrus, strawberries, broccoli. Any of them, in the same meal, not later in the day.

I keep a lemon on the counter purely for this. It goes over the greens, the lentils and the beans, every time.

🌱 2. Consuming Too Much Tea Or Coffee

This was my mistake. Coffee with breakfast, tea after lunch, and I was cancelling out both meals.

Tannins in tea and coffee bind to iron and stop you absorbing it. The effect is big enough to matter.

You don’t have to quit. Just move it an hour either side of the meal. That was the whole change I made.

🌱 3. Overlooking Legumes In Your Diet

Beans and lentils are where most of a vegan’s iron realistically comes from.

Plenty of people go vegan and end up eating pasta, bread and vegetables, with legumes showing up twice a week if that.

A cup of cooked lentils is around 6.6mg of iron. Chickpeas, black beans and white beans are all in the same territory. Aim for something from this family most days and the rest gets much easier.

🌱 4. Ignoring The Power Of Fortified Foods

Fortified food gets sneered at by people who want everything whole and natural. I think that’s daft.

Plenty of cereals and plant milks have iron added, and it counts the same as the iron in your kale.

Turn the carton around next shop. Two brands sitting next to each other can be completely different.

🥦 5. Skipping On Dark Leafy Greens

Greens do belong here, with one caveat.

Kale, chard and spinach all carry iron, but spinach also carries oxalates that block some of it. Kale and chard are the better bet if you’re choosing.

Cook them rather than eating them raw, and put something acidic on top.

🥨 6. Forgetting To Snack Smart

Snacks are free iron if you pick the right ones, and most people don’t.

Pumpkin seeds, cashews and dried apricots are all quietly good. Dried apricots especially, which surprised me.

I keep a jar of pumpkin seeds by the kettle and it does more for my iron than any week of salads.

🌱 7. Neglecting To Soak Or Ferment Foods

Whole grains and beans contain phytates, which grab minerals on the way through. Soaking, sprouting and fermenting break them down.

Soak your beans overnight instead of using the quick method. Leave oats in liquid overnight rather than cooking them from dry.

Sourdough over standard bread is the same idea, and it’s the easiest swap on this list because you just buy a different loaf.

🩸 Why Iron Matters In A Vegan Diet

Iron moves oxygen around your body. That’s the job.

When it’s low you get tired in a specific way. Not sleepy, just flat. Stairs feel like more than stairs and you lose your thread mid sentence.

It creeps up slowly enough that most people blame work, or stress, or getting older.

Which is exactly why the blood test matters more than the guesswork.

🩸 How To Monitor Your Iron Levels

Ask for ferritin, not just hemoglobin. Hemoglobin can look fine while your stores are almost empty.

Once a year is plenty if you feel well. Sooner if you’re tired in that flat way and can’t explain it.

If your results come back low, your doctor may put you on a vegan iron supplement. Don’t start one on your own. Too much iron causes its own problems and you can’t tell where you are without the test.

Numbers beat guessing, every time.

✅ The Bottom Line: Stay Informed And Proactive!

None of this needs a spreadsheet. Beans most days, something acidic on top, coffee moved away from meals.

Cooking in a cast iron skillet is a free extra, especially with tomato sauces, which pull a little iron out of the pan.

I noticed the difference within about two months, mostly in the afternoons.

And if you want it checked properly, a dietitian who works with plant-based clients is worth one session.
